In response to guest requests, we’ve converted frequent favourite Thai chicken noodles into a spicy treat for vegos: our Thai curry base with, carrots, capsicum, beans, red onions and mushrooms in a coconut cream sauce, served with rice noodles, and cashews for nutty protein goodness.

Nice light dinner with plenty of flavour! A good alternative if you have had enough of pasta. I possibly added to much water but was still really nice.
