Our search for the tastiest hiking dinners have led us many places, including the local Asian and subcontinental grocery stores. At the latter we found several compact, heat and serve meals for vegetarians, including this dhal from Maharajah’s Choice. It’s a bit heavier than freeze-dried or dehydrated food, but the flavour is sensational. We add a couple of multi-grain or gluten-free tortillas for some extra energy – dry-fry them for a minute or two each side for an almost-like-roti experience.
