The process of making freeze dried fruit is quite simple but it requires extremely specific equipment. First, Forager washes the fruit and slices it into perfect portions. Then, the apples are frozen on trays. Once the temperature plummets below -20°C, the fruit gets placed into a mammoth freeze driers, where the air pressure is reduced to almost that of outer space.
Because of this specialised air pressure, the boiling temperature of water is reduced to the point where it literally boils out of the fruit whilst the fruit remains frozen. The lack of heat preserves the nutrients inside the fruit and stops the product from shrinking. After 24 hours, the fruit is removed as a freeze dried snack that contains no moisture.

Fresh fruit was a delicious and rewarding option. Two of us shared 1 apple 1 orange each day. Selection provided was excellent and with care in packing they lasted 4 days easily. Fresh still best!
